A different beetroot soup with mushrooms and meatballs

You'll need: 
  • 300g Biovela Mom’s fried meatballs;
  • 1.5l meat stock;
  • 300g fresh, canned or dried forest mushrooms;
  • 2 – 3 small beetroot;
  • 2 carrots;
  • 5 potatoes;
  • 2 tbsp oil;
  • Salt, pepper and basil.
  • Chop the mushrooms (if using dried mushrooms, soak them for two hours beforehand) and fry with a little oil.

  • Slice the beetroot and carrots. Add the spices, drizzle with oil and add Biovela Mom’s fried meatballs. 

  • Roast in the oven for 20 mins. Then add the stock with the diced potatoes and continue cooking for another 20 mins.

  • Serve this non-conventional soup topped with a dollop of soured cream, if you like.
