Red mash

You'll need: 
  • 100g bacon rashers, cubed;
  • Potatoes;
  • 2 small beetroot;
  • 1 egg yolk;
  • 1 small onion;
  • 1 tbsp butter;
  • 2 tbsp soured cream;
  • Salt.
  • Peel and wash the potatoes and beetroot, then boil and mash.

  • Add butter and the egg yolk to the mixture.

  • Pour in some of the potato water to thin the mash to the thickness you want.

  • Mix well and heat slightly over low heat.

  • Top the mash with fried bacon and onion and decorate with soured cream.

  • Replace the beetroot with a grated carrot for a slightly sweet-flavoured yellow mash.
