Italian rice

You'll need: 
  • 150g rice;
  • 300g stock;
  • 100g hard cheese, grated;
  • 6 canned sundried tomatoes;
  • 1 small onion;
  • ½ tbsp olive oil;
  • Fresh basil leaves;
  • Salt and pepper.
  • Peel and chop the onion. Fry it with the rice, add the stock and cook for 20 mins. Don’t stir.

  • Stripe the tomatoes, chop the basil leaves and stir through the rice. Season with salt and pepper. 

  • Serve sprinkled with grated parmesan.
