Meatball-stuffed courgettes

You'll need:
  • 300g Biovela Mom’s fried meatballs;
  • 100g semi-soft cheese;
  • 100g light mayonnaise;
  • 3 medium courgettes;
  • A bunch of fresh dill;
  • Salt and pepper.
  • Cut the courgettes lengthwise, scoop out and chop the flesh.

  • Mix the chopped flesh with salt, pepper and dill.

  • Spoon part of the flesh into the courgettes.

  • Mix the remaining part with the meatballs and mayonnaise and spoon into the courgettes as well.

  • Top the courgettes with a few slices of cheese. Roast in the oven heated to 180 °C for 20 mins.

  • If you fancy sweet peppers, mix the meatballs with cooked rice and mayonnaise, season with a bit of salt and pepper and spoon into the sweet pepper.
